Our most asked question is ‘Who is Aegir?’ and the answer is simple: he is the Norse God of the Sea. He is known for his hospitality and embodies the dual nature of the ocean: its beauty and bounty, as well as its volatility. At Aegirfish, we focus on the bounty.

Aegirfish was formed in October 1995 by John Robertson and David Noble to supply mainland European fish wholesalers and supermarkets with fresh fish daily, from its headquarters in Ayr, Scotland. The company quickly established itself as a supplier of quality fresh seafood using trusted suppliers of only the finest fish and shellfish. Most of our trading partners had little export experience so, together, we grew over the years, developing new markets and expanding products to France, Switzerland, Germany and most of northern Europe.

Fast forward to now and the company still has David at the helm, now joined by his son Jamie, who looks after the export documentation and retail sales. The team is completed by Debbie Mathewson who has been office manager and head of accounts since way back in those early days.

Our Philosophy

With the UK coming out of the EU in recent years, it has highlighted how much of Scotland’s seafood ended up on plates in Paris, Berlin or Barcelona. Roughly 64% of our seafood is exported to the EU, whose love affair with our fish is still going strong. Countries like Spain and France consume almost triple the amount that we do here in Scotland and, with fish a key player in the Mediterranean diet, they enjoy all the benefits of the low fat, high protein, rich minerals and dense vitamins seafood has to offer.

Scottish seafood is renowned for its exceptional quality and flavour, drawn from the pristine, cold waters surrounding Scotland’s rugged coastline. I am going to make it my personal mission to raise those figures, at least locally. As an island nation, it is disheartening that we don’t take advantage of the many benefits seafood can offer. Reasons for this include:

  • I don’t like the taste/smell – You know the saying rubbish in rubbish out? (although in slightly more colourful language)

But fresh fish should not taste or smell ‘fishy,’ only offering a hint of the sea around us.

But fresh fish can be eaten raw, so there should be no worries about undercooking. What could be more simple than using the paper bag method? It’s an excellent way of steaming the fish in its own natural moisture, and doesn’t let the smell linger for days in the house.

We source only the finest fish and shellfish, fished using sustainable methods, supplied from our suppliers throughout Scotland. Most of these suppliers are long-term partners and friends of ours. All our fish come from specialist producers in that particular fish, ensuring both environmental responsibility and premium quality. In the export game, we can’t afford to send out anything that is not top-notch as it has just that wee bit further to go.
